Phoenix Dan Cong is produced from Chaozhou, Guangdong province. Being a type of oolong tea, Phoenix Dan Cong is typically famous for being dramatically aromatic and having an overwhelming fruity flavour, but it also has a distinct bittersweetness that unfolds into a lingering sweetness.

Tea was originally grown out of a seed where the offspring are different from their parents. Over a few hundred years of cultivation and selection, the best and healthiest tea trees were chosen for processing tea. Tea leaves plucked from different trees will produce different flavours, and each tree would be named based on the flavour of tea leaves produced from its original trees. According to incomplete statistics, there are more than 108 types of Phoenix Dan Cong. Huang Baizi, the honorary chairman of Phoenix Tea Professional Association has said about Dan Cong: “The thousands of flavours to taste, the endless names to remember”.

For this tasting session, Juyan has carefully selected four different Dan Cong oolongs to show you not only the differences of each tea but also what a “True” Dan Cong would be like:

Xue Pian (Snowflake): winter harvested from a group of tea trees that is about 60 years old.
Ya Shi Xiang (Duck Shit Aroma): spring harvested from a single tree that is about 60-70 years old
Ye Lai Xiang (Tuberose Aroma): spring harvested from a single tree that is around 80-90 years old.
Lao Cong Mi Lan Xiang (Old Bush Honey and Orchid): spring harvested from a single tree that is about 100 years old.

  • Brewing equipment (kettle, teapot etc.) and a surface on which to brew the teas during the webinar
